Easy Home Made Recipe

vegetarian Chili 

Ingredients :

-Onion 1

-Garlic 6 cloves

-Shallot 3 med

-Peppers: Red, Green bell, Poblano, Jalapeño, Anaheim. 1 each

-Carrots: rainbow if possible 4

-Celery 4 stalks 

-Sweet and Red potato 1 med each

-Mushrooms 

-Cilantro, Thyme

-Golden Beet

-Beans, Pinto, Black, Kidney, Garbanzo

Spices

-Roasted Garlic powder 1 tsp

-Onion powder 1 tsp

-Salt 1 1/2 tsp

-Pepper 1 tsp

-Cumin 2 tb

-Chipotle powder 1/2 tsp

-Ancho powder 1 tsp

-Bolsa powder 1 tsp

-New Mexico chili powder 1 tsp

-San Antonio chili powder 1 tsp

-Smoked Paprika 1 tsp

-Aleppo pepper 1/2 tsp

 

Sauté onions, garlic, shallot till brown. Add all peppers besides jalapeño. Add rest of ingredients and spices.

Add 2 cups of water or vegetable stock. Let cook on med high for 10min. Reduce heat simmer for 30-40min. Serve with thinly shredded purple cabbage and avocado.
